Harvested by hand at peak ripeness, the grapes undergo meticulous sorting before a four-week maceration in oak vats, with traditional foot pigeage enhancing extraction. Fermentation is spontaneous, driven by native yeasts, and vinification is entirely natural, free of additives or interventions, preserving the essence of the grape, vintage, and terroir. The wine is aged on fine lees for 12 to 24 months in demi-muids, resting within cool, ancient tuffeau-stone cellars that lend it remarkable depth and complexity.
