Les vins Mont-Val

Les Vins Mont-Val is a relatively new wine estate located in Aspiran, in the Languedoc region of France. Founded by Sophie Valancant and Jean-Yves Domont in 2019, the couple brings with them extensive experience from various renowned wine regions in France, Australia, and New Zealand. After working with esteemed winemakers and running their own biodynamic vineyard abroad, they returned to France to establish their own domaine.

Spanning 6 to 7 hectares, the estate boasts a diverse range of grape varieties, cultivated organically on basalt and clay-limestone soils. Dedicated to minimal intervention, Sophie and Jean-Yves craft their wines naturally, embracing traditional methods such as whole-cluster fermentation and aging in amphorae, barrels, and fiber tanks.
