Gaëlle Steunou manages a vineyard in Roujan, Hérault, with vines ranging from 25 to 100 years old. Since 2023, she's expanded her vineyard with new plantings of Macabeu, Cinsault, Terret Bourret, Grenache Gris, and Carignan Blanc. Each winter, she invites a shepherd and his flock to graze and fertilize the vines, adding a traditional touch to her biodynamic practices. Harvests are done manually in small crates.

Established in 2016, Gaëlle achieved Ecocert organic certification in 2019. Her winemaking in Vailhan uses a vertical press, stainless steel, and small-volume tanks, with minimal interventions and gravity bottling to preserve the wine’s purity.
