Manlio Manganaro

After working as an advertising art director, Manlio Manganaro opened *Enoteca Infernot*, the first natural wine bar and restaurant in Pavia, Lombardia, in 2011. Originally from Sicily, his close friendship with Marsala winemaker Antonino Barraco led him to discover a unique Grillo vineyard in Campobello di Mazara, just south of Marsala.

Grillo, believed to be a cross between Zibibbo and Catarratto, was once widely planted in the Trapani province. Manlio’s vineyard, situated on terra rossa soil over limestone, spans one hectare of young vines. He follows organic and biodynamic practices, employing low-intervention techniques in the cellar with manual pressing, and no fining, filtration, or sulfur additions.
