Vinification: Fermented in wooden vats with foot stomping and punch-downs. Maceration lasts 20 to 30 days, and the final blend is determined at the end of this process.

Aging: 24 months in 500-liter barrels (½ muids) on total lees.

Description: A wine that combines character and finesse. Pairs well with game, osso buco, and richly sauced meats. Like Pech Abusé, it evolves well after opening and can be enjoyed over several days.
