Heliocentric is Nikolas and Waita’s interpretation of Cerasuolo di Vittoria, Sicily’s DOCG where Nero d’Avola and Frappato traditionally come together. They don’t pursue the certification, but stay true to the spirit of the appellation.
The grapes come from old vines, picked together as they happened to reach perfect ripeness at the same time. They are co-fermented for seven days with the stems, before younger-vine Nero d’Avola joins the blend and undergoes the same process. The wine then spends time in a mix of old tonneaux and fibreglass, with roughly 70% Nero d’Avola and 30% Frappato.
Bottled unfiltered, unfined and without added SO₂.
On the nose, redcurrant, cherry and lilac. The palate is juicy and generous, with velvety tannins, fresh red fruit and subtle notes of spice and liquorice.
