L'enchanteur Merlot is made from vines that are on average 30 years old and grow on clay-gravel soils. The vines are cultivated using organic methods, certified by Ecocert, with minimal soil work, starting with partial plowing followed by full plowing and no fertilizer applications. The grapes are hand-harvested in the morning and placed in small crates. The winemaking process involves manual destemming, followed by a ten-day maceration with no pumping over or punching down; instead, the cap is gently immersed daily. The alcoholic fermentation is completed in old Bordeaux barrels. The wine is aged on the lees for ten months in these same barrels, with bâtonnage once or twice a week, and is bottled during a waxing moon
