Adonis is a refined red wine showcasing the elegance and complexity of Pineau d’Aunis, crafted from vines aged 4 to 80 years, rooted in the flint clay and limestone soils of Bueil-en-Touraine and Dissay-sous-Courcillon. At an altitude of 100 meters, the vineyards benefit from careful cultivation to ensure full ripeness, with manual harvesting and meticulous sorting. Maceration takes place over two to three weeks in oak vats, with traditional foot pigeage enhancing delicate extraction. Fermentation is spontaneous, driven by native yeasts, and vinification remains entirely natural, without additives or interventions, preserving the wine’s authenticity and connection to its terroir.

It is aged for 12 months on fine lees in demi-muids, resting in ancient tuffeau-stone cellars that imbue the wine with exceptional finesse. Light in structure but bursting with an unbelievable complexity, it offers notes of white pepper, subtle red berries, and a mineral-driven core.
