Le Cortijo Fuente Guijarro Sidra 2000 is a unique, natural cider crafted at 2,000 meters in the Sierra Nevada, where the cold climate allows for organic apple cultivation. Manuel and Sara have preserved ancient apple trees and planted 500 wild Prunus malus trees, grafted with rare, old regional varieties. The apples are harvested using mules due to inaccessible roads. The cider undergoes a 16-year aging process on lees, with a second fermentation in 2016.

Tasting Notes: Despite its age, the cider is pale yellow and cloudy, with a fresh, subtle nose featuring complex aromas of candied apple, green cardamom, and citron. The mouthfeel is full yet tense, more reminiscent of a fine white wine or sake than traditional cider, with light effervescence and green apple notes. The finish is delicate, with chalky minerality and a lingering green apple, slightly citrusy, and saline aftertaste—a truly unique experience for open-minded palates.
