The vines are grown in narrow rows or with 2.5-meter spacing, with controlled ground cover and regular organic additions. Soil work is kept to a minimum to manage weeds and incorporate organic matter, using tractors, caterpillars, or horses depending on the steepness of the terrain. Harvesting is done by hand in small crates, with careful sorting.
This blend is round and smooth, with delicate spice notes and strong minerality.
Winemaking & Aging
Whole clusters are gently crushed, followed by a short maceration of 3 to 4 days, depending on fermentation speed and extraction. Around half of the wine is aged in barrels for six months
