L'Arpent des Vaudons 2022
This wine has a pale yellow color with silver reflections and offers refreshing vegetal notes along with hints of white fruits. The initial taste is crisp, but it reveals roundness and finesse on the palate, showcasing excellent balance and great subtlety. The vines are located on south and southeast-facing slopes with clay-limestone soils, covering 9 hectares of vineyards aged between 10 and 60 years, with a yield of 45 hl/ha. The vinification process involves pneumatic pressing, followed by 48 hours of settling and alcoholic fermentation without added yeasts, stirring the lees for added complexity. This wine pairs beautifully with oysters, shellfish, fish-based appetizers, fish or vegetable terrines, and grilled fish. It also surprises with aged goat cheese and is perfect as an aperitif. Serve chilled.
