Meu is a tribute to Nacho’s close friends—its name means "mine" in Galician. Sourced from an ancient vineyard Nacho is reviving, this field blend combines red and white grapes. The grapes are hand-harvested, destemmed, and left to ferment on their skins in open-top plastic fermenters for about 20 days, with skins gradually removed halfway through. After fermentation, the wine is gently pressed into stainless steel tanks to rest, then bottled with no fining, filtration, or added SO2.
