This 100% Sumoll comes from a 54-year-old vineyard farmed sustainably in Santes Creus, located at 422 meters above sea level, with clay and limestone soils. The grapes were hand-harvested and destemmed, then gently macerated in an underground stainless-steel tank for 8 months. This extended maceration and aging allow the tannins to integrate fully. Bottled without fining, filtering, or added SO2, it reflects the natural character of the terroir.
