Ancestral Confiscat 2021
Made from 49-year-old Xarel-Lo vines in the Fugitu vineyard, this wine showcases vibrant freshness with lively bubbles and bright acidity, thanks to its ancestral method fermentation.
Vinification Method: Grapes are hand-harvested and pressed into stainless steel tanks for fermentation. Just before fermentation is complete, the wine is bottled so it can finish fermenting in the bottle, following the ancestral (pet-nat) method. After fermentation, the wine is disgorged and re-corked, with no sulfur added.
