Jeux de mains is made from Cinsault vines that are on average 60 years old, growing on clay-limestone soils with a marl-like tendency. The vines are farmed using organic practices, certified by Ecocert, with minimal soil work that begins with partial plowing followed by full plowing, and no fertilizers are applied. The grapes are hand-harvested in the morning and placed in small crates. The winemaking process includes manual destemming, followed by a short maceration of around ten days, with no pumping over or punching down; instead, the cap is gently immersed daily. Alcoholic fermentation is completed in old Bordeaux barrels. The wine is aged on the lees for ten months in these same barrels, with bâtonnage once or twice a week, and is bottled during a waxing moon.
