Salvaje Blanco 2020
Salvaje Blanco is crafted from grapes of the same variety grown in two distinct plots: one in Cerro Las Monjas (1,330m, schist soils, bush-trained vines, low yields) and the other in Barranco Oscuro (1,300m, clay soils, trellis-trained vines). The wine is made with manual harvest, spontaneous fermentation with native yeasts, no sulfur dioxide or additives, and aged in barrels for one year. It is unfiltered, unclarified, and may contain natural sediments. The vineyards are cultivated naturally, with minimal intervention and compost added every two years.
