The grapes are hand-harvested at optimal ripeness, with careful selection. Spontaneous fermentation occurs with native yeasts in stainless steel, without temperature control. Malolactic fermentation happens naturally during aging in barrels. No sulfur or additives are used, and the wine is unclarified, lightly filtered at bottling, and may contain natural sediments.
