Aptemiz VDF Blanc 2023
In 2020, Sylvie and Thierry conducted a test with a 2-year maceration of Chardonnay to explore how extended maceration affects the wine. They approach such experiments with intuition, curiosity, and testing to determine the optimal time. Based on this, they decided to extend the maceration period for Aptemiz over the last two years. For 2023, they found the perfect duration was 10 months. The grapes were destemmed by hand on a wooden board, then vinified and aged in amphora.
