Jacques Perritaz founded Cidrerie du Vulcain in 2006 near Fribourg, inspired by his encounter with Eric Bordelet. With a focus on high-quality, naturally grown apples, many from old orchards, Jacques crafts ciders that reflect his precision and passion. Working with over 150 varieties, including some unnamed, he practices traditional techniques like the "Guillage" method, inspired by Breton ciders and Clairette de Die. His ciders are fermented with wild yeasts and minimally filtered. A true autodidact, Jacques has built a reputation for elegant, unique ciders that stand out in the world of fine beverages.
